No-bake nostalgia; Tennis Biscuit fridge cake. I would have layered the choc mint variant with a mix of Caramel Treat and cream but I really wanted to use up the lemon curd cream I had left over from the lemon and walnut ice cream cake. For those who’ve never made this, here’s how you assemble the cake; line a small loaf pan with cling wrap, spread your filling on each biscuit and stack together, place the stack on its side in the pan, spread any leftover filling over the loaf and pull the cling wrap over it to keep it together. Place in the fridge for a few hours to set. To serve, slice the cake on the diagonal. #swipeformore #dslr #foodphotography #foodstyling #fridgecake
