Strawberry and cardamom buttercream cupcakes

Tinted pink by a drop of red food colouring, this buttercream frosting is accented by cardamom and strawberry.

Achieved by beating in strawberry essence, ground cardamom and a dash of elachi syrup (a cardamom syrup available from any Indian/Pakistani goods grocer), the cardamom notes were strongly reminiscent of falooda, and went down really well with a cup of tea after Iftaar.

    Oh nom nom nom!

    Pink frosting is my favourite. I guess I’m a pink girl at heart after all 😉

    I do enjoy putting a bit of rosewater in my frosting, so I think it will go brilliantly with the elachi here 🙂
