My spirit animal is Cookie Monster, so I don’t often bake up batches of biscuits to keep at home. #MustEatThemAll I found a recipe for single-serving microwave cookies and adjusted it to use ready-made muffin mix. For two cookies; melt 1 tablespoon of coconut oil, add four tablespoons muffin mix (any flavour, I used vanilla here. Chocolate is obviously good as well), 1 tablespoon chopped nuts (I like walnuts) and 1 tablespoon choc chips (you can omit if you like). Combine the ingredients to form a dough. Divide and pat out into rounds. These biscuits don’t really spread. Line a glass plate with microwave-safe clingfilm or a piece of paper towel. Place the biscuits on the prepared plate and microwave for 90 seconds. The biscuits will firm up on standing. These aren’t chewy cookies. The texture is very much like naan khatai; powdery yet firm and quite satisfying with a cuppa. #dslr #foodphotography #foodstyling #quickeats #cravingsatisfied #microwavecooking #cookiemonster
