The Ambrosia Salad does not enjoy the same cult status as its American export counterpart, the Red Velvet Everything, but it does share a touch of its flavour profile. It combines sweet canned fruit with pleasing sour notes from either cream cheese or sour cream and yogurt.
And then there’s the marshmallows. They will meld into the mixture, becoming little puffs of sweet happiness.
You could nix the marshmallows altogether, but where’s the fun in that?
Ambrosia Salad
- 250ml sour cream
- 1 cup yoghurt
- 100g chopped walnuts
- 1 cup pineapple chunks, drained
- 1 cup/small tin mandarin segments, drained
- 1/2 cup halved cherries
- 1 cup sliced kiwi fruit (substitute with fresh/canned (drained) fruit on hand)
- 2 cups chopped marshmallows/mini marshmallows
Mix the ingredients together and leave to rest overnight or for a few hours before serving.
